New month, new pilot batch!
It’s December and although it is unseasonably warm outside, I am still very much in the mood for dark, roasty beer.
Today we brewed the first official pilot batch of a porter that we are tentatively calling “Midnight, Fireside”. This name evokes roasted aromas and flavors like campfire smoke, graham crackers and chocolate.
As always, I keep my recipes simple. For this pilot batch, I used a base of Rahr Two Row, with a healthy portion of Debittered (De-husked) Black Malt to add rich roasted aromas and flavors and just a touch of Belgian Munich malt to create a hint of biscuit/graham cracker.
As far as the gravity of the beer goes, I thought it might be nice to keep this beer just below 5%. Make it quaffable, a bit dry and sessionable in the English sense of the word.
